Ingredients:
- Cooked Postman Brand rice – 2 cups (fluffy and separate)
- Raw mango – 1 cup (grated)
- Oil – 3 tbsp
- Peanuts – ¼ cup
- Green chilies – 3 (chopped)
- Dry red chilies – 4
- Ginger – little (grated)
- Asafoetida – a pinch
- Turmeric powder – a pinch
- Curry leaves – 1 sprig
- Mustard seeds & urad dal – 1 tsp
- Chana dal – 1 tsp
- Salt – as required
Step-by-Step Preparation:
1. Prepare the Rice:
Take 2 cups of cooked Postman Brand rice. Make sure the rice is fluffy and not sticky—this is key to getting the perfect texture and taste.
2. Tempering:
Heat oil in a pan. Add mustard seeds, urad dal, curry leaves, chana dal, and peanuts. Fry until golden and aromatic.
3. Add Spice & Flavor:
Add chopped green chilies, dry red chilies, grated ginger, and turmeric powder. Sauté well. Add a pinch of asafoetida for extra aroma.
4. Add Mango:
Now add the grated raw mango and salt. Mix well and cook for about 3 minutes until the raw smell reduces slightly.
5. Mix with Rice:
Add the cooked rice little by little and gently mix until the mango masala coats the rice evenly.
6. Serve:
